Feel Good Beauty: Happy Pancakes

Hello There Happy,


I will actually be out of town till Thursday, so Monday to Wednesday's post will be posted today.


The most important meal of the day of course is breakfast, but coming up with healthy breakfast items can be really hard, especially when your talking about something like pancakes,. I have come up with two very simple recipe for pancakes one chunky and the other smooth, both equally simple, tasty and inexpensive.


Ana's Chunky Banana Oat Pancakes

1/2 cup rolled oats
1/2 cup cottage cheese
1 banana (mashed)
1/2 egg whites
2 tbsp xantham gum (or flour)
1 tsp honey
1/2 tsp cinnamon
1 tsp vanilla
1 tsp baking powder
  1. Mix oats, cottage cheese, banana, xantham gum, honey, cinnamon and baking powder in a bowl.
  2. Beat egg whites till stiff peaks form.
  3. Fold egg whites into the rest of the batter.
  4. Drop Batter onto very lightly greased pan ( I spray my pan with PAM baking spray and then wipe up the excess with paper towel.)
  5. Cook on first side till bubbles form and then burst, then flip (they might seem a little delicate, but they're not.)
  6. Cook till other side is brown.
  7. Serve with fresh fruit, yogurt, and honey.

Ashley's Smooth Protein Pancakes

1/2 cup rolled oats
1/2 cup cottage cheese
1 banana
1/2 cup egg whites
1/2 tsp cinnamon

  1. Place all ingredients into a blender, blend till smooth.
  2. Drop into a very lightly greased pan.
  3. Wait till first side is browned, flip and cook the other side.
  4. Serve with fresh fruit, yogurt and honey.


Both recipes are really good, my personal trainer recommended the second recipe, but without any instructions, when I told her about my recipe, she thought that cottage cheese wouldn't break down, but it does and she is planning on trying out my recipe as well.
